1⁄4 cup corn oil (more oil helps)

2 teaspoons cumin seeds

2 bay leaves

dash of Hin

1/2 vidalia onion, diced

2 small garlic cloves, minced

1 thumb joint sized ginger piece, grated

1 can tomato sauce

1⁄2 teaspoon turmeric

1⁄2 teaspoon garam masala

1⁄2 teaspoon ground red pepper (powder)

1 tablespoon coriander powder

Temper the cumin and bay leaves in a 2 qt saucepan. More oil helps. When bubbling and giving off a scent, add onion, garlic, ginger, and hin. When onions are becoming translucent, add other spices and tomato sauce. Cook until oil separates, add main ingredients.
